This NOT your classic Kotleti recipe you'll find on the internet or YouTube, it's a recipe that dear ole Mom did for our family over the many years. It's very much like a Patychky which is a meat on a stick recipe, but no stick. It shares many of the ingredients of a Patychky, but is easier to make, requires no marinating. The combination of ground beef, pork and veal is so great, it's a marriage made in heaven. Kotleti Ingredients: This is my Mom's recipe for Kotleti which goes as follows: 1 package of ground beef, pork and veal. In this video I used a package weighing 679 grams, and they are usually sold in varying amounts. 1 Russet potato peeled and cubed into finger nail size pieces. 3/4 cup bread crumbs 1 egg 1/2 tsp celery salt 1/4 tsp each salt and pepper Dear Abby article Infallible rice: This recipe will serve four hungry or six polite people. 1 medium onion minced 2 tbsp butter or margarine 1 cup long grain white (not the quick rice type) 2 cups chicken broth Saute onions in butter until transparent. Combine onions, and broth. Bring to a boil on top the range. Cover and place in 325f oven for 20 minutes. Chef John's mushroom gravy: ¼ cup butter 1 (16 ounce) package sliced mushrooms salt to taste ¼ cup all-purpose flour, or as needed 1 quart (2 cups) beef stock 1 pinch ground black pepper to taste 1 pinch fresh thyme leaves, if desired, to taste https://www.allrecipes.com/recipe/219... Instructions: Heat butter in a saucepan over medium heat until it foams. Stir in mushrooms and season with salt. Simmer until liquid evaporates, about 20 minutes. Stir in flour; cook and stir for 5 minutes. Add 1 cup of beef stock, stirring briskly until incorporated, then pour in the remaining stock and mix thoroughly. Season with black pepper and thyme. Reduce heat to medium-low and simmer until thickened, stirring often, about 30 minutes. Assembling the Kotleti: Into a large bowl, add the 3 meat ingredients, add the egg, grated onion and garlic, bread crumbs and cubed potato salt and pepper. Mix by hand thoroughly then form into oblong shape, similar to a hot dog. In 3 separate bowls, add into each 1 cup flour, 2 eggs whipped up, and 1 cups bread crumbs Now roll each Kotleti into the flour, then the whipped eggs, then the bread crumbs. Take each coated Kotleti and slowly put them into 1 cups of Canola oil (vegetable oil should be okay). Fry them until slightly brown and place them into an oven proof container. Once all are browned place this into a 350f oven for 30-45 minutes.
