Super Soft Milk Buns Recipe | Burger Buns recipe | #milkbun #recipe Super Soft Milk Buns Yield: 10 buns (approx. 100g each) Baking Temperature: 180°C (preheated) Baking Time: 20 minutes Ingredients: Maida (all-purpose flour) – 500g Vital wheat gluten – ¼ tsp (optional, improves texture) Salt – 1 tsp Warm milk – 380ml (around 38–40°C) Sugar – 50g Instant dry yeast – 10g Oil – 70ml (neutral-flavored, like sunflower or canola) White sesame seeds – 2 tsp (for topping) Additional milk – for brushing Oil or ghee – for brushing after baking Instructions: Activate the Yeast: In a large mixing bowl, combine warm milk, sugar, and yeast. Stir well and let it sit for 5 minutes until foamy (skip this step if using instant yeast directly). Mix the Dough: Add flour, vital wheat gluten, and salt to the yeast mixture. Mix until a shaggy dough forms. Add Oil & Knead: Add oil and knead the dough for about 10–12 minutes until smooth, soft, and slightly elastic. You can use a stand mixer or knead by hand. First Proofing: Cover the dough with plastic wrap or a damp cloth. Let it rise in a warm place for 40–60 minutes, or until doubled in size. Degas & Second Kneading: Punch down the dough and knead again for 10–15 minutes to build more structure and elasticity. Shape the Buns: Divide the dough into 10 equal portions (around 100g each). Shape them into smooth round balls. Final Proofing: Place the shaped buns on a greased or parchment-lined baking tray. Cover and let them rise for another 30–40 minutes until puffy. Prepare for Baking: Preheat your oven to 180°C. Gently brush the tops of the buns with milk and sprinkle white sesame seeds on top. Bake: Bake in the preheated oven for 18–20 minutes or until golden brown on top. Finish: Remove from oven and immediately brush the tops with oil or ghee for a shiny, soft finish.
