Here is the recipe: 113g/ 8 tbsp unsalted butter (melted and cooled)) 133g/ 1 cup granulated sugar 171g/ 3 eggs 250g/ 2 cups of all-purpose flour 8g/ 2 tsp baking powder 2g/ ½ tsp lemon extract 14g/ 1 tbsp lemon juice 4g/ 1 tsp lemon zest 1 drop yellow food coloring (optional). Note: A pizzelle maker is required for this recipe. Preheat pizzelle maker according to manufacturer’s instructions In a medium bowl, add melted butter. Stir in sugar and allow it to completely dissolve. Add eggs, lemon zest, lemon flavoring, and lemon juice and combine. Add yellow food coloring (optional) and combine. Set aside In a separate bowl, combine flour, and baking powder. Combine wet and dry ingredients (batter will be stiff) Ensure pizzelle make is ready. Transfer 18-20 grams/1.4 tbsp. (approx.) of batter into pizzelle maker Set timer for 45 seconds They are ready in 45 seconds (time may vary).
