#PretendCookingShow: Pancakes (and espresso!) ☕️🥞 #KitchenAidAmbassador If you really want to make a Wednesday feel like a weekend, start your morning with easy homemade pancakes and any (or all, if you need it!) of your favorite espresso drinks you can make with your new KitchenAid Fully Automatic Espresso Machine. Americano? Flat White? Regular milk or plant-based? So many espresso options, all ready to explore at the push of a button. Oh, it’s joy. ♥️☕️♥️ . LIGHT & FLUFFY PANCAKES (via Cook's Illustrated) Ingredients: - 1 cup all-purpose flour - 2 tsps sugar - ½ tsp salt - ½ tsp baking powder - ¼ tsp baking soda - ¾ cup buttermilk - ¼ cup milk (plus a tablespoon or so extra if batter is too thick) - 1 large egg, separated - 2 Tbsp unsalted butter, melted - vegetable oil for brushing griddle (I use butter! 🧈) . Directions: 1. Whisk dry ingredients in medium bowl. 2. Pour buttermilk and milk into 2-cup liquid measuring cup. Mix in egg. (If you want EXTRA fluffy pancakes, whisk egg white into milk mixture and mix yolk with melted butter, then stir into milk mixture. My kids prefer it the first way 🤷🏻‍♀️) 3. Dump wet ingredients into dry ingredients all at once; whisk until just mixed. Lumps are our friends. 4. Meanwhile, heat griddle or large skillet over medium high heat. Brush griddle generously with oil/butter. When water splashed on the surface sizzles, pour batter, about ¼ cup at a time, onto griddle, making sure not to overcrowd. When pancake bottoms are brown and top surface starts to bubble, ~2-3 minutes, flip cakes and cook until remaining side has browned, ~1-2 minutes longer. 5. Re-oil the skillet and repeat for the next batch of pancakes. 6. Yum. Date: April 24, 2024
