CORNED BEEF SILVERSIDE WITH CHEESE SAUCE

CORNED BEEF SILVERSIDE WITH CHEESE SAUCE IS A CLASSIC AUSTRALIAN MEAL. serve 4-5 INGREDIENTS: 1.5 kilo CORNED BEEF SILVERSIDE cold water,enough to cover the meat 10 pcs. cloves 1/4 cup white vinegar 1 tbsp. brown sugar 4 pcs. bay leaves 1 tsp. pepper corn 1 whole onion 200 grams carrots,sliced 200 grams potato,quartered 200 grams pumpkin,cut large diced. CHEESE SAUCE INGREDIENTS: 115 grams cheddar cheese,grated 400 ml. milk 40 grams all purpose flour 40 grams unsalted butter 1/4 tsp. nutmeg 1 tsp.dijon mustard ground black pepper. In a pot place the CORNED BEEF with cold water. Add the cloves,vinegar,sugar,bay leaves,pepper corn and whole onion. Cover the pot, bring to the boil and simmer for 1.5 hours or until the meat is tender. Add the pumpkin, carrots and potato, cook for another 5-8 minutes or until the vegetables are soft.Turn the heat off and sit aside. TO MAKE THE CHEESE SAUCE: In a sauce pan in low heat, melt the butter. Slowly add the flour and whisk to combined. Slowly pour in half of the milk,continue whisking. Add the rest of the milk and continue whisking. Season with ground black pepper, follow the nutmeg and stir. Add Dijon Mustard,stir. Add the cheddar cheese ,stir until the cheese melt.Done! Slice the beef thinly and place in a plate with cheese sauce on top and vegetables.. SERVE! ENJOY!
