Lee Health Registered Dietitian Kat Galeos often speaks to the importance of eating whole foods. “We want to eat fruits and vegetables because we want to eat the rainbow, we want to get all those phytonutrients in our bodies.” While fresh, local, in season produce is ideal for a healthy diet, “Not everyone has the luxury of having a supermarket close by, or having a vehicle, and nowadays fresh vegetables are expensive, gas is expensive, so people are probably cutting back the frequency in terms of how often they’re going to the supermarket,” said Galeos. Frozen fruits and vegetables can be a great longer lasting alternative. “It’s easy to put frozen vegetables in pasta sauces, or kind of whip up a quick stir fry with them, so they’re easy convenient affordable and they also won’t spoil in a week.” In addition to the convenience, you’re still getting all the health benefits that they have to offer. “With frozen fruits and vegetables, when they harvest them they will freeze them right afterwards so all of their nutrients are kind of maintained,” said Galeos. If you don’t have enough room in your freezer, canned can be another alternative. “The canned vegetables may be processed with a little bit of sodium, rinse that so you don’t have all of that sodium in the vegetable, and fruit obviously might have a light syrup or if their canned water would be better, but just make sure you’re rinsing them as well.” Galeos said fresh is best, followed by frozen, then canned, but any vegetable is better than no vegetable.
