Hello viewers. Today’s recipe is chocolate madeleines. These days in Korea, loads of cafes are selling this type of madeleines, madeleines coat with chocolate. It goes really well with soft and moist madeleines and crunch taste of chocolate. Most of the cafes are selling 1~2$ per one madeleine. It’s not that expensive per one piece, but I wanna eat A LOT in a cheaper way, so I made these :) You can replace the almond flour to pastry flour, but almond flour gives more flavor into it, so I highly recommend to add! For flavor like the store-bought one 😊 And you MUST use a dark chocolate coating or tempered chocolate. If you don’t gonna use that, It won’t come out.😂 I want to make it simple, so I used a dark chocolate coating. In a bowl, mix with egg, egg yolk, sugar, and honey. 2. Shift the pastry flour, almond powder, cocoa powder, baking powder. Add into (1) and mix until well combined. 3. Add melted unsalted butter and heavy cream. Mix until smooth. 4. Rest in the fridge up to 1 hour. 5. In Madeleines pan, butter the pan, and sprinkle some cocoa powder. And place the batter 80% of the pan. Put the cacao nibs over the batter. Bake 180C / 355F for 10min. 6. Melt the dark chocolate coating with microwave. Replace the melted chocolate into the piping bag. Squeeze the dark chocolate into the pan about 1~1.5inch size.
