Prepare the Bottle Gourd: Peel the bottle gourd and cut it into small cubes. You can soak the pieces in water to prevent browning while you prepare the other ingredients. 2. Make the Yakhni Base: In a mixing bowl, whisk the yogurt until smooth. Add a tablespoon of all-purpose flour (if using) and mix well. This step helps in thickening the gravy. 3. Cook the Spices: In a cooking pot, heat the ghee over medium heat. Add the cumin seeds, fennel seeds, green cardamom, cloves, and cinnamon stick. Sauté until fragrant. 4. Add Ginger and Green Chilies: Add ginger paste and slit green chilies to the pot. Cook for a minute until the ginger is aromatic. 5. Add Bottle Gourd: Add the diced bottle gourd to the pot. Stir well to coat the pieces with the spices. Cook for about 5-7 minutes until the bottle gourd starts to soften. 6. Incorporate Yogurt: Reduce the heat to low and gradually add the whisked yogurt mixture into the pot, stirring continuously to prevent curdling. 7. Add Spices: Add the ground coriander, turmeric, red chili powder, and salt. Mix well. Allow the curry to simmer on low heat until the bottle gourd is cooked through and tender (about 10-15 minutes). Stir occasionally. 8. Finish with Garam Masala: Once the bottle gourd is cooked, add garam masala and mix well. Cook for an additional 2-3 minutes. 9.
