MI QUANG - VIETNAMESE QUANG STYLE NOODLE

Mi Quang is a type of noodle dish originated in Quang Nam province of central Vietnam. Mi Quang is made with thick rice noodle that had been dyed yellow using turmeric powder. This dish is full of freshness. It has so many different textures and a flavorful broth. Making mi Quang has a lot of steps. But I assure you it's all worth it. INGREDIENTS FOR THE BROTH 3lbs pork bones 1 onion, charred 2 ginger, thumb sized, charred 1 tablespoons rock sugar 3 tablespoons salt TO MARINATE THE PORK BELLY 1/2 pound pork belly 1 tablespoon fish sauce 1/2 teaspoon onion powder 1/2 teaspoon garlic powder 2 teaspoon paprika 1/2 teaspoon turmeric powder 1/2 teaspoon salt 1/2 teaspoon black pepper TO MARINATE THE SHRIMPS 1/2 pound whole shrimps 1/2 teaspoon fish sauce 1/2 teaspoon salt 1/2 teaspoon paprika 1/8 teaspoon turmeric powder 1/8 teaspoon garlic powder 1/2 teaspoon black pepper TO COOK THE PORK BELLY 1 tablespoon oil 1 tablespoon shallots, chopped 1 tablespoon garlic, chopped 1/8 teaspoon more of paprika 1 teaspoon sugar 1/8 teaspoon more black pepper 4 tablespoons of the pork stocks TO COOK THE SHRIMPS 1 tablespoon oil 1 tablespoon shallot, chopped 3 tablespoons of the pork stocks.
