Salmon with Creamed Spinach & Mushroom Sauce 三文鱼配奶油菠菜白蘑菇酱

Cooking this baby version creamed spinach sauce, adding some white button mushroom; it tastes surprisingly good & not over-creamy, especially served with the pan-seared salmon. As a cream-based sauce, it also works very well for pasta sauce. I used ricotta cheese to replace commonly used parmesan & other aged cheese, for lower salt content. Ricotta cheese is one of the best cheese suitable for babies; it contains relatively low sodium and is very nutritious. One other great thing about ricotta cheese is that it can thicken the sauce. I slightly blanched the baby spinach to reduce the oxalic acid, then finely chopped it before cooking it.
