According to the ancient Chinese dictionary Shuowen Jiezi, "Dukang, also called Shaokang, was good at brewing wine." Dukang is revered as the founder of Chinese liquor brewing, and legend holds that he discovered the art of winemaking in Baishui, earning it the title of "Hometown of the Liquor Ancestor." As early as the Xia Dynasty, Dukang brewed fragrant liquor using sorghum, laying the foundation of Chinese alcohol culture. Throughout history, Baishui Dukang was favored by emperors and scholars alike. The famous line from Cao Cao's Short Song Style, “What can relieve one's sorrow? Only Dukang,” immortalized the liquor in Chinese literary heritage. Brewing Technique & Flavor Profile Baishui Dukang is brewed using traditional solid-state fermentation, employing high-quality sorghum and wheat, combined with deep underground spring water. The process involves natural fermentation in aged cellars and multiple rounds of distillation, preserving an authentic and time-honored method of liquor production. The resulting liquor is clear in appearance, mellow in taste, and rich in aroma, with a long and pleasant aftertaste.
