Suya 1 lb boneless beef or chicken, sliced Spice blend, recipe below 1/4 cup ground peanuts or PB2* 2 tbs neutral oil, optional Optional accoutrement: Lettuce Tomatoes, sliced Cucumbers, sliced Red onion, sliced thinly Additional Suya spice Suya Spice Blend: 1 tbs chicken or beef bouillon 1 tbs onion powder 1/2 tbs garlic powder 1 tbs smoked paprika 1 1/2 tsp ginger 1/8 tsp ground cloves 1 tsp black pepper 1 tsp cayenne, optional for heat 1/2 tsp salt** Soak bamboo skewers with water. Clean, cut, and pat dry your meat of choice. Whisk together all of the spices to create the Suya spice blend. Grind the peanuts to desired consistent consistency, or use PB2. Season the meat using the spice blend. Season the meat heavily, but you will not need to use all of the spice blend that you created. Massage the spice into the meat. Sprinkle peanut powder on the meat. Add oil, if using. Skewer the meat in a ribbon pattern so that it’s secure. Grill beef over direct heat until brown on both sides. Grill chicken over indirect heat until cooked throughly and lightly browned. Notes: *Peanut butter also works, but has a different texture ** Salt should be omitted if you are using salted peanuts
