Subscribe for more 4k ASMR Cooking    / @inmyfridgefoods   Ingredients: 1 block firm tofu Oil to fry, about ½ cup 2-3 ripe tomatoes, diced 1 shallot, diced 3 cloves garlic, minced 1 tablespoon of frying oil 1 teaspoon of sugar 2 teaspoons of fish sauce or soy sauce ~ ¼ cup water, divided Freshly cracked black pepper, to taste Cilantro and green onions for garnish Directions: 1. Prepare the tofu by draining it and patting with paper towels. Cut the tofu into flat bricks and pat it dry with paper towels once more then set aside while you cut/dice the other ingredients. This extra time will allow the tofu to release and drain a bit more of its juices for a crispier fry. 2. Heat the oil in a wok over high heat. When the oil hits 350F, add the tofu bricks. Fry the first side until golden brown, about 7 minutes. Then flip them over and fry the other side, about another 3 minutes. Once golden all around, remove the tofu bricks from the oil and drain on a plate lined with some paper towels. 3. Now prepare the sauce: in another pan, add about 1 teaspoon of oil (the one that you used to fry the tofu is fine). On medium heat, add the shallot and garlic and cook until the garlic is just browned. 4. Add the diced tomatoes to the pan and stir to mix. Add about 3 to 5 tablespoons of water then cover with a lid and let tomatoes soften for about 5 minutes. 5. Uncover the pan and add the sugar and fish sauce and stir until the sugar is dissolved. 6. Adjust the thickness of the sauce by adding more water. I used about ¼ cup water in total. Then add the tofu to the pan and gently stir to coat with the tomato sauce. 7. Plate the dish and season with some cracked black pepper.
