Heat 2 tbsp oil in a pan, add baingan slices, and fry on medium heat until soft and slightly golden. Set aside to cool. Prepare the Yogurt Mix: In a bowl, whisk the yogurt until smooth. Add salt, roasted cumin powder, chopped garlic, chopped tomato, and green chili (if using). Mix well. Combine: Once the baingan has cooled, add it to the yogurt mixture.
