Here is a basic recipe to prepare mutton ojri: Ingredients: - 1 kg mutton ojri (tripe), cleaned and cut into pieces - 2 onions, finely chopped - 2 tomatoes, chopped - 2-3 green chilies, chopped - 2 tablespoons ginger-garlic paste - 1 cup yogurt - 1 teaspoon turmeric powder - 1 teaspoon red chili powder - 1 teaspoon coriander powder - 1 teaspoon cumin seeds - 1 teaspoon garam masala - Salt to taste - Fresh coriander leaves, chopped (for garnish) - 3-4 tablespoons cooking oil - Water as needed Instructions: 1. **Clean the Ojri**: Thoroughly clean the mutton ojri under running water. It's often recommended to boil it for a few minutes and then rinse it again to remove any residual odor and impurities. 2. **Parboil the Ojri**: Place the cleaned ojri in a pot, cover with water, and bring to a boil. Boil for about 10-15 minutes. Drain the water and set the ojri aside. 3. **Cook the Onions**: In a large pot, heat the oil over medium heat. Add cumin seeds and let them sizzle. Add the chopped onions and sauté until they are golden brown. 4. **Add Spices and Tomatoes**: Add ginger-garlic paste and sauté for a couple of minutes. Add turmeric powder, red chili powder, and coriander powder. Mix well. Add the chopped tomatoes and cook until they become soft and oil starts to separate from the masala. 5. **Cook the Ojri**: Add the parboiled ojri pieces to the pot. Stir well to coat the ojri with the masala. Cook for a few minutes, stirring occasionally. 6. **Add Yogurt**: Lower the heat and add the yogurt. Mix well and cook for another 5-10 minutes, allowing the flavors to blend. 7. **Simmer**: Add enough water to cover the ojri. Bring to a boil, then reduce the heat and let it simmer until the ojri is tender, which can take about 1-2 hours. Keep checking and adding water if necessary. 8. **Finish**: Once the ojri is tender, add garam masala and salt to taste. Cook for another 5-10 minutes.
