Green Onion Bread 葱油包

▦ Ingredients: 2 cups flour (面粉) 2 teaspoons sugar (糖) 1 cup water (水) 1 teaspoon yeast (酵母) 1 teaspoon baking powder (发酵粉) salt (盐) five spice powder (五香粉) green onions (葱) sesame seeds (芝麻) ▦ Steps: -- Make yeast mixture -- 1. Get 1 cup of warm water. 2. Add 1 teaspoon of sugar and stir for a few seconds. 3. Add 1 teaspoon of yeast and stir for a few seconds. 4. Set aside and let water, sugar, yeast mixture rest for 10 minutes. You'll notice a thin layer of foam forming at the top. This is good! -- Make dough -- 5. Get a mixing bowl and add 2 cups of all-purpose flour. 6. Add in 1 teaspoon salt, 1 teaspoon sugar, 1 teaspoon baking powder. Then pour in water, sugar, yeast mixture. 7. Mix - use spatula to start so your hands don't get sticky. 8. Knead dough for a few minutes. Periodically add flour if it starts getting too sticky. 9. Once kneaded, cover and let rest for 30 minutes. Don't worry if the surface looks a little lumpy! (30 minutes later...) 10. You'll notice it's gotten bigger. This is the yeast doing its work. Pour on some oil and start kneading again. 11. Knead until oil's completely integrated with dough. 12. Cover and let rest for 2 hours. -- Prepare green onions -- 13. Chop up some green onions. We used 5 stalks as a happy medium. You can use more/less depending on your preference. 14. Add oil to pan and turn to medium heat. Once hot, pour in green onions. 15. Saute with 1/2 teaspoon of salt until it starts to brown. Green onion cooks very quickly! Once done, pour into bowl and set aside. -- Assemble the bread -- 16. Uncover the rested dough and start punching out the air. Transfer to cutting board and roll into a strip. 17. Cut evenly into 8 pieces. 18. Knead each piece into a ball and set aside to rest for 15 minutes. Make sure it's covered while it's resting. (15 minutes later...) 19. Take a dough and flatten into a rectangular shape using a rolling pin. 20. Spread green onions over the whole thing. 21. Add a pinch of salt - sprinkled evenly over the whole thing. Do the same with five spice. This makes a huge difference in flavor! 22. Lift up the long side and start rolling it into a... roll. Once the roll is formed, roll it into a swirl (like a cinnamon roll). Keep the crease inside as you roll it to prevent green onions from leaking out later on when you flatten it. 23. Flatten with rolling pin. 24. Add sesame seeds. -- Cook the bread -- 25. Heat pan over low heat and add oil. Very important that it's on low heat so the outside doesn't burn while the inside is still cooking. 26. Place flattened breads into pan and cover lid (side by side, don't stack them). 27. Cook each side for 4 minutes. 28. Add some water then cover lid. This steams the inside and makes bread soft. 29. Continue flipping to get your desired level of crispness. When surface is golden brown on both sides, it's ready. 30. Remove from pan and you're done!
