Chocolate Coffee Caramel Mousse Cake | Cappuccino Mousse Cake

This Chocolate Coffee Caramel Mousse Cake is one of my favorites, as it contains 3 flavors that I love: coffee, chocolate and caramel. Try to cook it and everyone will be delighted! INGREDIENTS For Coffee Cake (for 6-inch or 16cm baking ring): 3 tablespoons all-purpose flour, sifted 1 teaspoon instant espresso powder 1 tablespoon unsalted butter, melted 2 tablespoons dark brown sugar 1 large egg For Praline Crunch (for 6-inch or 16cm baking ring): ¼ cup peanut butter, crunchy ⅛ cup (1 oz) milk chocolate, melted ⅓ cup waffle crumbs For Coffee Caramel Creme Brulee (for 6-inch or 16cm baking ring): 1 cup heavy whipping cream 1 teaspoon pure coffee extract 3 tablespoons whole milk 1 ½ teaspoons gelatin 6 teaspoons water 1 teaspoon dark brown sugar 2 egg yolks 1 tablespoon caramel sauce For Milk Chocolate Mousse (for 7-inch or 18cm baking ring): 1 ¼ cup heavy whipping cream, divided ¼ cup whole milk 1 egg yolk 1 tablespoon granulated sugar 1 cup (8 oz) milk chocolate 1 tablespoon gelatin 6 tablespoons water PREPARATION To Make the Coffee Cake. 1. Preheat the oven to 350°F (180 ̊C). Line a 6-inch (16cm) round cake pan with aluminium foil. 2. In a medium bowl, whisk the egg, brown sugar and instant espresso powder until fluffy and whiteness. 3. Add the melted unsalted butter, sifted flour and gently mix with spatula until combined. 4. Pour batter into prepared round cake pan and bake in fully preheated oven at 350 ̊F for 10 minutes, or until a toothpick comes out clean. 5. Remove cake from oven and let cool completely. To Make the Praline Crunch. 1. In a medium bowl combine melted chocolate, peanut butter and waffle crumbs, mix well until combined. 2. Place the crunch on a frozen cake and put in the freezer while making chocolate mousse. To Make the Coffee Caramel Creme Brulee. 1. In a small bowl combine gelatin and water and set aside to soften. 2. In another bowl mix together egg yolks and brown sugar until well combined. 3. In a saucepan mix cream, coffee extract, milk, egg yolks mixture and caramel sauce; heat until thickened. 4. Add the swollen gelatin. Beat with a blender, allow to cool down and pour on top of the coffee cake. 5. Put in the freezer for 4-5 hours until completely solidified. To Make the Milk Chocolate Mousse. 1. In a small bowl combine gelatin and water and set aside to soften. 2. In a saucepan mix together egg yolk, sugar, milk and ¼ cup of cream and heat until thickened. Remove from heat. 3. Add the swollen gelatin. Beat with a blender, allow to cool down. 4. Pour the egg yolk mixture onto milk chocolate and mix well. 5. Beat 1 cup of whipping cream with an electric mixer on high speed until stiff. Gently stir whipped cream into the milk chocolate mixture. To Assemble the Coffe Caramel Mousse Cake. 1. The 7-inch (18cm) baking ring lay a plastic wrap and place in the freezer for 10 minutes. Then pour the milk chocolate mousse into the baking ring and put in the center of 3 layers, ending with coffee cake. Remove excess mousse, cover with a plastic wrap and place in the freezer for at least 4-6 hours. 2. Completely frozen cake cover with a mirror glaze or cover with caramel sauce. The cake should be thawed in the refrigerator for 5-6 hours before serving.
