For lunch, it’s a chili baked potato bar—the ultimate comfort food! Dessert? A homemade apple cobbler from our fall harvest and some snow ice cream straight from the backyard. While the kids juggle homework and backyard snow fun, I’ll be wrapping up the day with a slow and romantic goat cheese chicken risotto for dinner. The world outside may be freezing, but the warmth of the farmhouse kitchen will wrap you up like a big hug! Baked Potatoes: Wash and dry your baking potatoes and place on a parchment lined baking sheet. Drizzle with olive oil and sprinkle with salt and garlic salt and then massage until well coated. Bake at 400 degrees for about 30 minutes and then flip them over and continue baking another 30 minutes or so until fork tender. Outside will be slightly crisp and interior fluffy and tender. Baking time will vary on size of potatoes and oven temps. Homemade Chili: We made a pot of chili in this video and you can find that recipe in the description box of this video here:    • Fall Farmhouse Kitchen Comforts | Hea...   Homemade Snow Ice Cream: 1 cup sugar 1/2 cup milk + 1/2 cup heavy whipping cream (or just use all milk like grandma ;) ) 1-2 tsp. vanilla extract Whisk the wet ingredients together and then add in fresh snow and mix until you reach the desired soft serve consistency. Best served right away! It was a late night chopping apples and I just through it together for our freezer stash! I assume it was very similar to this recipe for crisp: https://www.allrecipes.com/recipe/241... Creamy Chicken Goat Cheese Risotto: 2 large chicken breasts 1-2 Tbsp. Olive Oil 1/2 tsp. Garlic powder 1/2 tsp. Onion powder Salt + pepper Cube the chicken breast into bite-size pieces and saute in a fry pan with seasonings until cooked through. Set aside. 1 c. Arborio Rice 4 c. Chicken Broth 1 Tbsp. Butter 1 medium onion diced 2 tsp. fresh minced garlic In the same pan, add the butter and diced onion. Saute until translucent and then add in the garlic and rice to toast slightly. Add one cup of the broth to deglaze your pan. You can also use wine to deglaze if you have any on hand. Then continue to add one cup of warm broth at a time to the rice allowing it to absorb most of the liquid before adding in more. The result is a very creamy risotto rice. If needed, use the 1/2 c. extra water to continue the process until the rice is creamy and al dente. 1/2 cup chopped spinach 4 oz. Goat Cheese (or use cream cheese instead) Once the risotto is finished, add the cooked chicken back in along with the goat cheese and spinach. Stir to combine and melt the cheese into every bite! Top with a drizzle of balsamic glaze if desired. See method below: Balsamic glaze: 1) Over med/low heat, add the balsamic vinegar to a small saucepan. Allow the vinegar to simmer while stirring (do not burn). Cook until the vinegar begins to thicken and coat the back of a spoon. Remove from heat and allow to cool slightly.
