Malfouf is cabbage leaves stuffed with rice, meat, spices, and herbs. It's very easy to make at home and more importantly, it's the food of gods. As is expected, there is no 'right' way to make malfouf, and although my mother in law taught me her recipe, I've probably deviated from it somewhat over time. I'd love to know what your take on Malfouf is - do you also serve with lemon and yoghurt? I can't imagine it without! Let me know in the comments :) ------------------------------------------------------------------------------------------------------- Ingredients 1 whole cabbage 1 onion, in disks and slices 4-5 sliced cloves garlic The filling: 300g soaked and washed short grain rice 150g chopped mint and parsley 1 bulb garlic, minced 400g minced beef 2 tbsp 7 spice 1 tsp cumin 1 tbsp salt 1 tsp white pepper The sauce: 135g tomato paste 1 litre (or so) water 2 (large) tsp salt 2 tsp white pepper Cube chicken stock Good glug of olive oil ------------------------------------------------------------------------------------------------------- This channel is about my daily adventures living in the Middle East and how I navigate motherhood outside of a comfort zone as MIA - Mummy in Amman 🙃 Waving, not drowning 😅🙋🏼‍♀️ Say hi if you’re in a similar boat!
