"No fear!" - I said to myself... :) I have minimum waste in my kitchen, so I decided to dehydrate those tomato skins and make dry tomato flakes out of them. It's a rather easy recipe, just takes a while to dehydrate (about 2 h). Also, even if you don't have a dehydrator, no worries! I don't have one either, and I just used my conventional oven at the lowest heat setting. All you need to do is concasse your tomatoes following the demo in this video, dehydrate the skins in the oven and then crush them to flakes with your fingers. *If you have a spice grinder - use it to make dry tomato powder, even better.
