Egg Fried Rice & Prawn Fried Rice Family favourite quick & easy recipe on how to make Egg Fried Rice with Prawns and Egg fried Rice with vegetables. Packed with flavour and a great Chinese dish to serve for lunch or dinner Ingredients: 1.5 cup regular rice (mogra rice) 200g peeled and deveined prawns 4 tablespoons vegetable oil/sesame oil -50g butter 1 medium onion, finely chopped 7 cloves garlic, minced -Mixed vegetables (1/2 cup sprouts, 1/2 cup carrots, 1/2 cup green beans ) 2 eggs, beaten (2 white ,1 yolk) Salt and pepper to taste Green onions (scallions) for garnish (optional) SAUCE MIXTURE 4 Garlic Chilli Oil ( • Garlic Chilli Oil (Simple & Best ) -2 tbsp soy sauce -3 tbsp oyster sauce -3 tbsp sesame oil -1/4 tsp black pepper -1/4 tsp salt Instructions: 1. Cook the rice: Cook the rice with enough water, adding salt Boil uncovered stirring until the rice is softened through but still a tad al dente (read: not mushy). Drain the rice through a fine mesh strainer. Once cooked, spread it out on a tray or plate and let it cool. It's best to use cold, day-old rice for fried rice as it's less sticky. 2. Prep the prawns: 1 tbsp marinate them in a mixture of Garlic chilli oil soy sauce mixture 3. Heat the oil: In a large skillet or wok, heat the vegetable/sesame oil over medium-high heat. 4. Cook the prawns: (take separate pan) Add the prawns to the hot oil and cook for 2-3 minutes on each side until they turn pink and opaque. Remove them from the pan and set aside. 5. Sauté the vegetables: add the chopped onion and garlic. Sauté for a couple of minutes until they become fragrant and slightly softened. Add the mixed vegetables and cook for an additional 2-3 minutes until they start to soften. 6. Scramble the eggs: Push the vegetables (or you can cook separately) to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs with a spatula as they cook. 7. Combine everything: Once the eggs are cooked, add the cold rice little at a time, add Garlic chilli oil & soy sauce mixture same way add rice add sauce toss well Remove Egg Fried Rice Separately Now add cooked prawns to the egg fried rice Pour soy sauce over the mixture and stir-fry everything together for 5-7 minutes until the rice is heated through and well-coated with the sauce. 8. Season and garnish: Taste and adjust the seasoning with more soy sauce, salt, or pepper if needed. Garnish with chopped green onions if desired. 9. Serve: Your Egg fried rice & Prawn fried rice is ready to serve hot. Enjoy!
