INSTAGRAM:   / marcelcocit   TWITTER:   / marcelcocit   Roasted Garlic Cauliflower Mash Serves 4 Ingredients 1 head of cauliflower, cut into florets 2 -tablespoons olive oil 2- teaspoons chopped garlic 3 -tablespoons unsalted butter ¾ cup unsweetened almond milk or milk of your choice 1-tablespoon fresh chopped rosemary, plus 1 sprig for garnish 1- teaspoon kosher salt ½ teaspoon freshly ground black pepper 1-2 tablespoon chopped parsley for garnish Directions 1. Place the cauliflower florets into a medium pot of salted boiling water, cook for about 10-12 minutes until nice and tender. 2. Meanwhile heat up the olive oil in a small sauté pan, add the chopped garlic and cook until it almost golden brown, remove from heat, and place into a small bowl. Set aside. 3. Once the cauliflower is cooked, strain into a colander and add it back into the pot. Add your butter and almond milk into the cauliflower. With a hand held blender or a food processor blend the mixture until nice and creamy. 4. Add your roasted garlic, rosemary, salt and pepper and with a wooden spoon blend all those flavors together. 5. Place the cauliflower mash into your favorite dish and garnish with chopped parsley and a sprig of fresh rosemary. Serve hot and enjoy the love. ☺
