The skewers with lamb or goat organs, wrapped in breadcrumbs and intestines are present on the table of the Greeks and Aromanians, for Easter. For gourmets who love organs, they are a real delight - juicy, slightly crunchy on the outside, subtly flavored with oregano and pepper. It is a 100% Balkan dish, also present in Albania or Bosnia with about the same name. The Turks call it kokoreç (kokoreci), the Greeks kokoretsi, the Albanians kukurec. In translation it means cob, the name was consecrated by the Turks.
