I'm a grad student who loves to eat simple, quick, and delicious vegan food. This video is full of meals that you can incorporate into your every day life. I'm an intuitive eater that aims to eat mostly whole, nourishing foods, but also enjoys food freedom! I don't label any foods as "good" or "bad", I just listen to what my body needs and wants. Thank you so much for tuning in and be sure to subscribe if you like what you see! :) Macaroni Stew: (This is a previous recipe - this time the only thing I did differently was use tofu instead of quinoa!) Ingredients: 1 small potato 1 cup chopped broccoli 1/2 an onion 3-5 cloves garlic 1/2 cup tomato sauce 1/2 veggie bouillon cube 1/2 cup butter beans 1/2 cup cooked quinoa 1 cup macaroni (dry) Kale (your preference on amount) Salt, oregano, lemon pepper, and any other preferred spices to taste Directions: 1. Get some water boiling for your pasta and some oil heating in a separate pot for your veggies 2. Chop up potato, onion, garlic, and broccoli and add to pot on medium-high heat 3. Cook until the potatoes are about half done 4. Add in tomato sauce, bouillon, beans, and quinoa (reduce heat and simmer for a couple minutes) 5. Chop up kale and massage 6. Add in pasta noodles when they're about 3/4 done along with about a cup of the pasta water (add more or less water for preferred thickness) 7. Add in chopped kale 8. Let simmer for 3-5 more minutes until pasta is fully cooked 9. Enjoy!!
