"Green Curry Chicken with Eggplant" This is a delicious soup especially if you love the taste of the green curry and coconut milk. This is is very healthy with virtually no fat and a lot of vegetables. The Thai eggplants are smaller especially the pie size, if its not available at your home you may replace this ingredient with eggplants that are available. I love nature, cooking outside next to my beautiful garden, I am also a nature girl with I cook often outside over coal fire and very common in Thailand country side. While I showed the meal being cooked outdoors the same recipe is just as easily cooked in a conventional kitchen.
